Watermelon, Mint and Creme Fraiche Salad

Ingredients
1 tsp cumin seeds, toasted
1 tsp coriander seeds, toasted
2 garlic cloves, roughly chopped
1 tbsp Robur Farm Dairy plain spreadable chevre
Juice of 1 lemon
1/2 a red onion, sliced
1/2 cup cherry tomatoes, halved
1 1/2 cups diced watermelon
4-5 coriander leaves
4-5 mint leaves
Method
- In a mortar and pestle grind coriander and cumin seeds until finely ground. Add garlic and grind into a paste.
- Place into a bowl with creme fraiche, lemon juice and a pinch of salt. Stir to combine.
Service Suggestion
To serve, place remaining ingredients into a bowl and and drizzle over the dressing.
